Here on the farm, we are always on the lookout for quick, fun recipes that will give us some variety. This week we have just such a recipe, Old Fashioned Buckeye Peanut Butter Balls Recipe, This is a very versatile recipe, you can tweak it in several different ways to get wonderfully diverse treats.

As we are sure you have noticed, if you have read many of our other talks, we like bite-sized treats that are easy to make and family safe.

Old Fashioned Buckeye Peanut Butter Balls Recipe

Ingredients:

2 cups of crushed cookies

2 cups of powdered sugar

2 sticks of butter softened

1 cup of Peanut Butter

Melting Chocolate

colored sugar or sprinkles (optional)

food coloring (optional)

Steps:

1. In a mixer, cream the softened butter and powdered sugar.

An electric mixer makes short work of it but you can mix by hand if you want to. This is a soft mix so hand mixing is doable.

2. Add the Peanut Butter and blend until well mixed.

3. Add the crushed cookies and blend well.

We used animal crackers in our mix. But you can use Vanilla Waffers, butter cookies, or whatever sweet cookie you like best or have on hand.

It is easiest to put the whole animal crackers in the blender to crush them up.

4. Put the mix into the fridge or freezer to chill.

5. Once chilled, roll the mix into small, bite-sized balls.

You may need to take a few out at a time as the mix becomes very sticky, very quickly. When we roll our mix, we use a little spray oil on our hands to help keep the mix in a ball and not stuck all over our hands.

6. Put the balls back into the fridge or freezer to harden.

7. Melt your chocolate. Use either store-bought, melting chocolate, or homemade chocolate dip.

We have done both. The store-bought is, as you would imagine, a faster way to do it. But homemade chocolate, in our opinion, has a better taste and is healthier for you.

Making your own chocolate is not a quick thing but in the end, you know what is in it and you control the amount of sugar you add to it.

8. Roll each ball in the melted chocolate. Do this quickly as again, the mix will become sticky very fast.

It is best to use parchment paper on the baking sheet to keep things from getting all stuck together or having chocolate all over the place.

9. Place the Old Fashioned Buckeye Peanut Butter Balls back into the fridge.

10. For special themes or seasonal Peanut Butter Balls, roll them in sprinkles or colored sugar.

You can also add a small, edible cake decoration to the top for some extra flair.

We did several different versions as everyone likes a different kind of treat. For the chocolate lovers, we did the standard melted chocolate. For those who do not like chocolate so much, we rolled the balls into more crushed cookies and added a drop of food coloring for a spot of fun. For those who like it all, we rolled the balls with warm chocolate in sprinkles.

This is similar to thinking with do-nuts. Some people like plain glazed, some like chocolate, and some like it all the way with chocolate, cream-filled, and sprinkles.

That is one of the joys of homemade treats, you can make it the way you like it or several different ways in one batch.

It is best to keep them in the fridge until you are ready to serve them. Again, the soft nature of these Old Fashioned Buckeye Peanut Butter Balls makes them melt and turn to mush in minutes.

This recipe makes a soft, creamy inside with a nice, chocolate snap on the outside. It is a rich dessert but not as sweet as some like it. We like the flavor not to be overwhelmed by just sweet.

Normally these are reserved for the Holidays but they are great year-round. If you need a quick treat for church outings, school bake sales, or family get-togethers, this is a good, quick treat with a very rich flavor.
