As we have a family farm and we grow a lot of our own foods, we have some of these ingredients on hand. We can go out to the garden, pull them, and use them immediately. That is fast, fresh, and convenient grocery shopping. An added bonus, we know what is in our foods, where they came from, and what if anything they were treated with. Most of the time, we do not have to spray our garden. We use natural bug control so there are rarely any kinds of chemical or commercial pesticides on our food. Our garden is fertilized with natural, organic mulch so no chemicals there either.

To make the Feta Cheese Olive Bruschetta Recipe you will need:

Cilantro

Garlic Salt

Olive Oil

Black Olives

Green Olives

Diced Tomatoes

Feta Cheese Crumbles

Crisp Crackers

Grapes (optional)

You will need a good-sized glass container. We use the ones that have a sealing top to keep our bruschetta fresh.

To start we put half a cup of olive oil in the bottom of the bowl.

This picture shows a large bottle of olive oil.

Add a few tablespoons of garlic salt. Of course, you can add or subtract the amount of salt that you want.

A while back we did a talk on How to DIY Homemade Garlic Salt.

Next, we add some freshly picked and chopped Cilantro. This came from our garden also.

If you want to get all the goodie out of the garlic salt and cilantro you can let this sit for a bit so the flavor mixes into the olive oil.

Now add some diced tomatoes. We cut up fresh tomatoes from our garden.

Our farm does not grow olives yet so we did have to use canned olives. Dice up a can of black olives and green olives and add them to the diced tomatoes.

We do have a few baby olive trees that we have been tending for a few years now. One of our baby olive trees had a few little olives this year. We are so proud of it.

Mix the tomato and olives into the bowl and give it a good mix.

Crumble up the Feta cheese and layer in on top of the rest of the mix.

If you want to make your Bruschetta pretty, you can live it with the layered look to serve it.

Again, this is one of the easy recipes just put all the ingredients in and give it a shake. We layer our ingredients but that is just because that is the order in which we put them into the container.

So pitch the ingredients into a bowl, mix them up, and let them sit for a few hours, to blend. You can put it in the fridge to keep but the olive oil with get solid so you will need to take it out of the fridge or warm the bruschetta before you serve it.

Now just add some crackers or crisps and you have a colorful, tasty, healthy, treat. It can be served as a dip or as a side dish.

Of course, you can use any kind of cheese you like, if feta is not your thing. Add more or less olives, tomatoes, herbs, or spices to make this mix exactly to your taste. This is another one of the joys of homemade foods, you can make it just like you want it. There is no telling that what is available in the store will be good this time.

There is one other thing we wanted to make a note of, the grapes. Normally grapes are not included but they can be. To add grapes, just dice them up and mix with the other ingredients. Grapes add a hint of sweetness to the otherwise savory mix. Some people like the hit a sweet spot in their bruschetta and others do not like it. Use your own discretion here, add grapes if you like a bit of sweetness or don’t your choice.
