or Pineapple Cucumber Sandwiches

With our Summer Dessert Recipe Series in full swing, we have another quick, easy recipe for you. Deluxe cucumber sandwiches are finger-food-sized, cool and refreshing and so easy to make.

The kids can get involved with this easily, as there is nothing hot to handle. Kids can do the measuring, mixing, and cutting with adult supervision.

This is a great recipe to make ahead.  You can make a batch and put them in the fridge until you need them.

We do not recommend freezing for later. That is not a great experience. Something happens to the cucumbers when they are frozen. And the bread gets soggy when defrosted.

To make Deluxe Cucumber Sandwiches

You will need:

a loaf of bread

8 ounces cream cheese

2 tablespoons mayo

1 teaspoon dill

3 cups of cucumber either sliced, chopped, or grated.

How much bread you will need totally depends on how many sandwiches you want to end up with.

This is best to know before you start. But you can add more if you find you need to.

 

That is one of the best things about making it yourself, you can stop in mid-stride and change things if you want.

Along with having fresh, hand-made foods and knowing exactly what is in it, of course.

Add the mayo and cream cheese and mix.

In our house, we use always Mayonessa for everything. Mayonessa has lime already in the mayo. This adds a slight kick to the cucumber sandwich.

Add the dill and mix.

Add the cucumbers and mix. It is best, after cutting or grating up the cucumbers, to gently press out the extra moisture. Too much moisture makes the cream cheese mixture too sloppy.

The mix will not be smooth as there are chunks of cucumber in it. But you want it smooth enough and the ingredients well mixed.

Spread the cucumber mix onto a slice of bread, and top with another slice of bread. At this point, you can cut it into squares. You can use a cookie cutter to make cute shapes. You can cut off the crust if you like. Whatever shape and size you want, you can make them.

 

We normally just cut the sandwiches into halves or squares. Cookie cutters waste too much bread. We do not cut off the crust either.

You will need to take care when cutting the sandwiches.

The mayo mix between two pieces of bread does make it a bit slick. When cutting be sure to hold the knife firmly and hold the bread gently in place. You do not want to cut and have one piece of bread slide off.

As with many recipes, you can tweak the spices to your specific liking. If you are not fond of dill, omit it. Add chili or lime or a dash of garlic to create a unique flavor for your cucumber mix.

We like to add pineapple to our cucumber. The pineapple gives the normal cucumber sandwich a bit of a tropical twist. And we love pineapple.

 

It is best to use crushed pineapple. We only had chunks on hand and it worked. But the finished mix was a bit chunkier than we had in mind.

As we mentioned in the Pineapple Surprise Recipe, we use a safety can opener.

This kind of can opener leaves the can and lid with a smooth edge. You do not get the usual ragged edge you get from a normal can opener. We love our safety can opener. It is all we use these days since we found it.

We can save the cans and reuse or up-scale them into our craft projects.

As with the cucumber, you will need to gently press out the extra pineapple juice. This will help make the mix less sloppy.

To add pineapple to your cucumber sandwiches, just follow the regular recipe.

Once you have all the ingredients mixed, including the grated cucumbers, add the pineapple.

Mix well to be sure the pineapple is mixed in with the other ingredients.

Now continue with spreading the mix over your bread and cutting as you choose.

Put the sandwiches into the fridge to chill. If you are making ahead, cover them or put them in an air-tight container. They will dry out if left uncovered.

 

Now eat and enjoy.

These are great for church eating meetings, summer parties, school functions, and family get-togethers. These cucumber sandwiches are good enough for afternoon tea.

These cucumber sandwiches are so easy to make and so good to eat. You may want to make these little sandwiches a weekly side dish for regular meals.
