As we continue with our Summer Dessert Recipe Series, we want to share an Easy, 4-step Pineapple Surprise Dessert Recipe.

This recipe was introduced to us some years ago. To this day, we are still not sure what the surprise part is. It is a simple, quick, and very easy recipe, there is no real surprise. Perhaps the surprise part is how easy it is and how good it comes out.

To make a pineapple surprise you will need:

An over safe dish

We use our family’s old, glass dishes. They have been in the family for a couple of generations and are still in good shape, we get the best cooking results, and they make for easy cleanup.

1 can of Pineapples. You can use crushed, chunks, or rings it does not matter.

 

1 package of gram crackers.

We like the cinnamon gram crackers. Any brand will do. We have even used older, not as fresh crackers for this recipe. It does not seem to make a difference in the finished product.

 

Brown Sugar

The amount depends on what size pan you are using.

 

1 stick of butter

Take your dish and be sure to spray it with non-stick spray or olive oil. We do not want the desert to stick to the pan.

Crush up the gram crackers in the bottom of the pan.

Open the pineapple can and pour off the juice. You do not want the extra juice in your dessert.

We, as you know by now, try to save and use everything we can. So we save the pineapple juice and keep it for other uses. We have some family members that like to add pineapple juice to their tea for an extra kick. The pineapple juice can be used in other cooking and baking dishes as well.

A while back found this wonderful device, the safety can opener. This thing is awesome. It opens cans and leaves the edges of the can and the tops smooth. Not like regular can openers that leave sharp, ragged edges.

We recommend everyone get a safety can opener. With this, we can save the cans, up-cycle them for craft projects, and take one more step toward a low waste household.

We do have a couple of baby pineapples growing in the greenhouse. They are not ready to give off pineapple so for now we buy fresh or canned pineapple.

Spread the pineapple over the gram cracker layer.

Layer the brown sugar over the pineapple. Again, the amount you will need depends on how big a pan you need to cover. Be sure to get the entire dish covered with brown sugar.

We like our pineapple surprise almost caramelized so we use a thick layer of brown sugar.

Cut up the butter and spread it out over the brown sugar.

Put into the oven and cook at 350 for approx 20 minutes. The time will vary by the size and depth of the dish you use.

Take the dish out of the oven and give it time to cool before you try to eat it. The pineapple surprise will be very hot, almost molten lava so do not try to eat it right away.

Once it has cooled a bit, add ice cream, whipped cream, or whatever topping you like. And enjoy.

 

Pineapple surprise is very sweet all on its own so you may not want to add any toppings.

 

This is not a recipe for diabetics, vegans, or anyone with health issues. This is another one of those old-fashioned, full of rich, sweet stuff recipes.

Pineapple surprise is quick and easy so it is the perfect go-to recipe for family get-togethers, church eating outs, and last-minute dessert needs.
