Let’s face it, everyone needs comfort food from time to time. Today we have a nice basic comfort food to share with you, Cinnamon Spice Muffins Recipe.
As you know from other talks, we are now on the fifth generation of our family on this farm. You may also have noticed, we keep everything. If it came onto this property, it is likely to still be here. We love books and cookbooks.
One of our favorite cookbooks is an old Good House Keeping Illustrated Cookbook. Every house should have one, we have several. We keep an eye open at Goodwill, yard sales and flea markets for them. When we find one, we pick it up. You never know when you will need another copy. We usually give one as wedding gifts or for new house warming gifts.
This cookbook has just about everything you could need to know for family cooking and then some. And many of the recipes are basic so you can adjust them to your needs.
One such example is today’s recipe. We used a basic Chocolate Cake recipe and altered it to make our Cinnamon Spice Muffin Recipe.

This recipe give you a nice, moist muffin. These muffins have just enough sweet to be called a sweet treat but not too sweet for those of us how do not really like sweets. Yes, there is one of those in every family. You can, of course make a cake instead of muffins but for today we make muffins. We like muffins, they are easy to make, and easy to carry, one serving size treats for on-the-go.
To make Cinnamon Spice Muffins you will need:
2 cup of flour
1 ¾ cups of sugar
1 ¼ cups of milk
3 eggs
1 ¼ teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
1 teaspoon vanilla
¼ cup of Cinnamon

muffin papers
Yes, the original recipe was for chocolate cake so it called for cocoa but we tweaked this recipe to make Cinnamon Spice Muffins instead.
We like to keep things organized and simple so we have a bowl for dry ingredients and one for liquids. We mix the two bowls separately and them combine them in the mixer. You can mix this recipe by hand but an electric mixer is much easier.
1. First off, heat the oven to 350 degrees. It takes about as long for out oven to heat up as it takes us to get the muffins ready to go in.
2. In the first bowl, mix all of the dry ingredients and be sure they are well blended. Be careful when adding the ground Cinnamon, it is very fine and will scatter all over.
3. In the second bowl mix together all of the liquid ingredients.
4. Mix until all ingredients are blended and you have a smooth batter.
5. It would seen obvious but just in case it is not, place muffin papers into the muffin tins. You do not have to use muffin papers but it makes for easier serving and easier clean up.
6. Carefully pour your batter into the muffin papers. Fill each muffin paper just half full, this will allow the batter to rise and not out grow the tins. Do not over fill or the muffins will rise over the tins, run out and you will have a mess in your oven.
7. Bake at 350 degrees for about 20 minutes. As every oven heats a bit differently, keep an eye on your muffins to see that they do not burn. You should check to be sure they are fully cooked before you take them out of the oven. If you have a cake tester just slip it into the center of a muffin or two. If it comes out clean, you muffins are cooked and ready to remove from the oven. If the tester come out with wet batter on it, the muffins need a few more minutes. You can use a toothpick if you do not have a cake tester.
Be careful not to burn yourself on the oven, the muffin tins, the hot muffins or the hot cake tester. It will put a cloud on your comfort food if you burn yourself making it.
8. When the muffins are ready take them out of the oven. Use caution when handling hot items. And use proper protective covers, like oven mitts or pot holders.
9. It is best to let your muffins cool for a few minutes on a wire rack or a trivet before you remove the muffins from the tins.
10. Once the muffins are out of the tins, you can add any kind of frosting you like or none. We did not frost our muffins, we like the flavor of the cake and do not need the extra sweetening.
As we said before, this is a basic recipe that you can tweak to make whatever kind of cake or muffin you like. Add chocolate like the original recipe called for. Omit the cinnamon that we used. Add other spices, or natural flavorings to get your muffins just the way your like them. What your muffins with a bit more sweet, add some frosting. The frosting can also be made to whatever flavor, sweetness or even texture that you want.
We use this same basic cake mix for chocolate, orange, or lemon flavors.
You can make muffins or cakes, loaf pans or bunt pans. It is totally up to you to make whatever you like with this recipe. Like many good basic recipes, it is versatile enough to fit the kind of treat you are wanting to bake.
